This was actually the starter dish

Just read your blog about your meal at L’Univers, Villefranche
Les ‘respountchous’ is the Occitan ( patois) spelling of ‘responchons ‘ (that are actually pronounced ‘respounchous’!)
 An elderly neighbour says that the responchon is the  ‘l’herbe aux femmes battues’ – beaten wives grass!!
 Tanous is another Occitan word with a variety of spellings and they are the spring shoots on brassicas like brussel sprouts or cabbage.
 Cordes has an annual Fete de Responchons in April but as far as I know there is not a Fete de Tanous;
