Just as we Anglo Saxons have got used to seeing parsnips (panais) and Jerusalem artichokes (topinambours). black radishes and Chinese artichokes (crosnes) on the markets. producers think that their popularity has peaked. Up by about 200% in the last 7 years sales of these old style vegetables is starting to tail off. Very popular with top chefs who take time to prepare their dishes, home cooks are less impressed by odd shaped vegetables which demand more time and whose tastes are unfamiliar.
But if you have a potager these vegetables can be easy to grow, being more pest resistant. But it seems that at least parsnips will still be there for your Christmas dinner.
