Michel Bras on the up

The Aveyron chef, possessor of 3 Michelin stars for many years has been voted the world's most influential chef by over 500 of his peers in a poll by "Le Chef" magazine. Last year he was placed 6th. The 528 voters, all with at least two stars, were asked to list their top 5 chefs, taking into account -innovation, respect for the values of the profession and a must-visit restaurant. Le Suquet in Laguiole is now run by Sebastien Bras, but Bras pere is in overall charge, with a restaurant in Japan, as well as a brasserie in Rodez and a "fast food gastronomique" in Toulouse.
There is some suggestion that as Le Chef is French dominated, with many of the 528 chefs actually being French and operating in France, that insufficient weight is given to overseas chefs whose restaurants are consistently voted the world's best.
