salade de réspountchous

We have learnt the occitan spelling for responchons/ responchous is réspountchous, now we learn how to make a salad.
First gather the tips from the countryside, these wild asperges/ asparagus tips are highly prized in France.
Take a bunch of asperges and boil in salted water for 10 mins.
 Hard boil 3 eggs
Fry some lardons
Chuck it all together with salt, pepper and vinegar
