Gluten free chocolate cup cakes

I've been testing some recipes and came up with this fantastic recipe for
gluten free chocolate cake which is now going to be my signature gluten free
recipe but I'm happy to share it.

Glynis says you do need 3 beaten eggs, now added to the recipe.


Gluten free chocolate cupcakes ©
120g butter
120g dark chocolate
3 beaten eggs
150g caster sugar
40g cocoa powder
80g ground almonds
1 teaspoon vanilla
Grease and line a 7” cake tin or it will make 7 large cupcakes
Melt chocolate and butter slowly in a saucepan and leave to cool slightly –
you can help this process by tipping the contents into a bowl
Now you can turn the oven on – 150 °
When your oven has reached the required temperature add all the other
ingredients to the melted chocolate and pour into tin or cupcake cases.
Bake in the oven for about 30 minutes – these cakes are super moist so a
toothpick won’t necessarily come out clean. They should be well risen and
crackly on top
