Mushrooms, funghi, cèpes are ugly but delicious, a little late in arriving this year, but it will not be long before you see French country folk sneaking ( and yes, I mean sneaking) off with their bags to gather mushrooms. Twelve years ago we were presented with a bag of cepes by our neighbour. After he had gone we looked at them in horror, what were they? Totally ugly, inedible looking things and yes, in to the bin they went. Not even the compost bin then, whereas now we all have compost bins don't we? Not long after we were served cepes in butter and garlic by one of our more "savvy" culinary friends and "by gum" were they good.
Although we know the woods to go into we have never found the exact location of cepes and the French we know will touch the side of their noses with a knowing wink but never tell us the spots to find them.
