Now it could be foie gras

After the shortage of butter, producers are warning of a lack of foie gras for the traditional end of year festivities.

At the first "marché au gras" of the season in the Gers there were fewer birds than normal, though enough to satisfy the buyers. Two episodes of bird flu this year have hit supplies of poultry and many suppliers fear that there will be a reduction of about 20% in foie gras available.
Prices were about 35-40 euros per kilo for the livers, and about 16 euros for a fat duck carcase, which were about normal - though as Christmas approaches prices may increase.
Locally the Monday morning marché gras at Caussade is well known for the quality of produce and many French families will be wanting to buy the foie gras to prepare at home according to their favourite recipe.
