Beans means Tarbes

White beans are a staple of many French meals, but the haricot Tarbais is the grand cru of the bean world. Selling at about four times the price of other white beans, the production has increased from 12 growers ten years ago to more than 70 today. Production is mainly centred in Haute-Pyrenees and it is essential that the crop is harvested by hand; about 400 seasonal pickers are engaged to do the harvest.

Although many beans are exported especially to Japan and the USA, it is the home market which consumes the most: so your "luxury" cassoulet will be better for haricots tarbais, apparently.
