Truffles with a very strong smell / un parfum très fort, are something a bit special at this time of the year in our region. They can be found from November to March, nowadays truffle dogs are used to scent them out rather than pigs. Martin Malvy President du conseil regional de Midi Pyrenees inaugurated projects this week making Lalbenque a site remarkable for this black jewel loved by cooks and gourmets. He says Lalbenque now has a world wide reputation.
One thing about truffles is at least they are not controversial like foie gras!
