Malc has reported this story about dissent in the 3 etoiles/ stars kitchen of Joël Robuchon. Two of his commis chefs have accused the great chef of harassment, citing knife throwing incidents, being called dogs, connards / not a nice name, a bit like a bastard, making them drink the water of dishes too heavily salted. etc.They are suing him and now Rebuchon is hitting back suing with a complaint of defamation. None of it very good for business.
Why do top chefs have these tantrums in the kitchens? A lot of chefs are famous for it.When we ate at the Michel Bras Cafe, admittedly not a 3 star, we liked the fact you could see into the spotless kitchens and see the chefs at work. Perhaps that is a way forward to stop these temper tantrums.
