As the resident architect, I noticed the post about roofs. A certificate of conformity is just for cars.
French roofers (couvreurs) give a 'décennale' which is a 10 year guarantee on roofs.
They are obliged by law to conform to French building regulations but there is no authority to verify whether this has been done or not.
Here in France there are no building regulation officers nor a building regulations department. A big shame as I always found them very helpful in the UK.
Best to employ an architect, have a decent technical specification and a good contract in place!

On a Christmassy note, I went to a lovely restaurant last night in Cordes-sur-Ciel.
Our meal was excellent so I highly recommend the Hostellerie du Vieux Cordes for special occasions!
Cordes was magical with all the Christmas lights.
