Please pass on my thanks via TAGlines to Emma Hilditch for her courgette spaghetti recipe.
It took me a while to get round to doing it but it was absolutely delish. So fresh a taste and so easy to do. I just love any excuse to get out my mandolin, too, to pretend I'm a real cook. We had it with baked salmon with an aubergine coating. The only downside was that Athos the hound dog was desperate for a bit of goats' cheese or salmon, and we both ate the lot with no leftovers, so we're in his bad books.
