Top chef

Helene Darroze is a French chef, originally from the south west area of Les Landes and who has been named as the world's best woman chef by British magazine "Restaurant". She was used as the model for a character in the Disney animation "Ratatouille" - a feisty chef who berates the world of haute cuisine as being run on stupid rules written by old men to the exclusion of women. Said to be much gentler in real life she has nevertheless taken her south west influences to her own restaurant in Paris as well as the Connaught hotel in London. Her signature dishes include fois gras and poached lobster.
